Goodbye Madam Cory

August 1,2009 , 3:18 am - Mrs. Corazon Aquino, succumbed to cardiorespiratory arrest at the Makati Medical Center. She had been suffering from colon cancer for more than a year and was confined at the hospital since June. Recently she was refusing further treatment leaving her fate to God.

Cory, as she is fondly called , became president when the 1986 "people power" uprising ousted former dictator Ferdinand Marcos. I have seen her as a woman of faith, a fighter, a source of hope and inspiration for all of us, not just her family but our entire nation as well

She was nominated for the Nobel Peace Prize in 1986 and received numerous awards and citations for her efforts to uphold democracy and human rights. She is considered the global Icon of People Power!

FILIPINO CHICKEN ADOBO

Chicken Adobo
6 Servings
1 chicken (~3lbs) pieces
1/2 c soy sauce
3/4 c white vinegar
1 heads garlic (more if pref)
2 bay leaves
1/2 T peppercorns
1 salt (to taste)

Boil Chicken with soy sauce, vinegar, garlic, bay leaves and
peppercorns and simmer for half an hour. Remove the chicken pieces from the pot and broil them in a pan for 10 minutes. Let the sauce in the pot boil until it is reduced by half. Add salt to taste. Cover the broiled chicken pieces with the sauce. Serve hot. Serve with rice.

Terrified but thankful

July 27,2009 around ten o’clock , I went out from the office to buy some supplies. The street was crowded because of some on-going protest against the President GMA’s State of the Nation Address The blogger instinct in me drawn their attention. So I went out the jeepney, took my camera and started taking pictures . I was attracted with their slogans written on colored umbrellas when suddenly eight militant men started to encircle me. They started interrogated me and demanded my ID. Worst they tried to confiscate my camera. Thank God, male students nearby intervened and helped me. Whew! What a terrifying experience.

Our church website was hacked last October 2008. Initially, we let one of our deacons, an Electronics Communication Engineer to fix the problem but to no avail. One way to evaluate what's important to a person is to pay attention to what he or she asks questions about. The more questions, the more interest! A person may sit attentively during a lecture , but is the person really interested in that presentation? The attentive posture may be just an exercise in politeness. But if a person begins to ask lots of questions when the presentation is over, that's a sure sign that the elcture is important to him.

The same is true in church. Hebrews 10:25 tells us " Let us not give up meeting together, as some are in the habit of doing, but let us encourage one another - and all the more as you see the Day approcahing."The Lord design the church in such a wat that we grow spiritually as we share ourlives and faith with fellow beleivers. We mature as we interact and ask thoughtful questions. Jesus at the age of 12 provides an example in his interaction with the religious scholars. If Jesus needed to mature spiritually, who are we to think we don't?

MJ'S WALL

Got a chance to write on Michael Jackson’s Wall at SM. I enjoyed reading various dedications . Some were full of emotions while others were a little bit “over-acting”. My hubby and kids wrote also on the wall with matching caricatures. Me? I just quoted some striking verses for others to ponder. A big television was on the site showing various concert tours of MJ. Some memorabilia were on sale also ( business…. Business…)

JESUS TAKES THE WHEEL

Food Trip Friday # 1

(Palitaw is one of my favorite " Pinoy kakanin". Above picture was during my brother's birthday last May.)

Ingredients
* 3 cups sweet rice flour
* 1.5 cups of water
* 1 small coconut grated
* 1 cup sugar
* 1/4 cup toasted sesame seeds, crushed


METHOD
1. Bring 2 quarts water to a boil.
2. Combine rice flour and 1.5 cups of water and blend thoroughly. Shape dough into egg sized ovals with floured hands.Flatten with thumb.
3. Drop the palitaw balls in boiling water. Scoop out with clotted spoon as soon as they float. Drain. Roll in grated coconut.
4. Serve with sugar mixed with toasted sesame seeds.
Preparation and cooking time: 30- 45 minutes
Makes about 4 dozens of palitaw

MY BROTHER'S WEDDING

Praise God ! My brother’s wedding was prefect and beautiful. It was a simple Civil Wedding but an Intimate one. Attended only by immediate family members and very close friends. It was a dream come true for the couple. My brother who is already 44 years old finally found his lifetime partner. I could see in his eyes the joy and excitement - from start of the wedding and during the reception.

NEGATIVE FROM H1N1

Xavier University the biggest university in our city was closed for 10 days due to H1N1 virus. Eight of their students were found positive of the virus. Yesterday, my son called me that the Department of Health representatives were at their school ( Liceo de Cagayan University) conducting tests on all students. His teacher said that classes will be suspended if a student will be found to have H1N1.

He added that more than half of his classmates were down with fever and flu. My son was a little worried when he said that. Today will be the announcement of the the result. I know everything will be fine. I thank God for his abundant grace and mercy. For sustaining us with god health. In JESUS NAME! AMEN.

A PRAYER

My little girl is again having fever and complained of tummy cramps. I am little bit worried because Dengue Fever is now widespread due to the rainy season. As I browse the net searching for its symptoms, I can not help but be worried. The fever subsided since last night, so we decided to send her to school since it is their first monthly exam. She does not want to be absent also.

I am earnestly praying that everything will be okay for her. Lord, spare by kids from this deadly virus. In Jesus Name, Amen!

SOLITUDE

If Jesus needed solitude in order to keep His earthly steps synchronizes with the Father’s heart, then there is any doubt that you and I need to schedule our days so that our first priority is time alone with God. This quite time is not so that God hear us but so that we can hear from God. He has things to tell us and truth to impart to us that we can hear only in silence. God wants us to know His secrets : “ The Lord confides in those who fear Him”. Secrets are told in whispers; they are not exchanged in the hustle and bustle of life, but in quite places and in quite moments. Jesus gave these instructions about prayer, “ When you pray, go into your room, close the door and pray to your Father, who is unseen.

I felt guilty of being inconsistent with my quite time with the Lord. Early morning is my busiest day – preparing food and things for school. Often times I do my QT early office hours and in the evening.

DEL MONTE , PHILIPPINES

Pictures above were taken last week at Camp Philips, Bukidnon. I went to Del Monte Philippines to discuss very important matters regarding our lot rented by the company. It was raining but I told my hubby to take a quick shot at me for my blog…hahahahaha. This is how blogging influenced me a lot.

Bunggalow was the previous dorm for executive visiting the site but now it was converted to a restaurant. Whew! The steak was very delicious and the fresh fruits were equally satisfying.

I took a photo also of the Pine trees along the road. Seeing them reminds me of my college days in Mindanao State University and my Baguio Vacation.

WHAT'S YOUR PERFUME?

My love for perfumes started when I was in high school. I was influenced by my father who is a cologne/perfume addict . He has a collection of perfumes but his favorite was Charlie ( I do not know if this brand still exist today) . What’s ironic was that my father’s choice were the branded ones while my mom’s were the locally made baby cologne hahahahaha.

I am picky when it comes to perfumes . I am sensitive to strong scents due to my sinusitis so I prefer a blend of fruits and floral . I do not like overpowering scents rather i fancy soft smelling , enchanting as well as divine scents . Something that will last not only for a day but until night.

All these I found in Victoria’s Secret . My long time favorites are love spell, secret charm and forbidden Fantasy. What’s yours ?
